Pepper Mushroom

2 cups mushroom,sliced
2 spring onions
1tbsp ginger paste
1tbsp garlic paste
3 green chillis
2tbsp greens
2tbsp soya sauce
1tsp pepper
2tbsp oil
salt

Heat oil in a pan and saute chillis and ginger garlic paste for 2 minutes.
Add onions and fry till they turn slightly brown.
Add the mushroom and fry till they are cooked.
Add the salt,pepper,soya sauce and cook for a minute.
Garnish with greens.

Cheese Fondue

1 cup milk
1 cup cheese spread
2tbsp onion
1tspn corn flour
1/2tsp chilli powder
1tbsp butter
salt

Mix cornflour in 1tbsp of cold milk.
Heat butter in a pan, add onions and fry for 2 minutes.
Add milk,cheese,corn flour paste and salt,mix well.
Bring to boil and keep stirring,add chilli powder.
Seve hot with bread

Paneer Tikka Masala

250gm paneer,cubed
3 tomatoes
3 onions
2 poppy seeds
4 cloves
1 cinammon
4 cardamom
2tsp kasuri methi
1tsp chilli powder
1/2 tsp tumeric powder
2tsp dania powder
1tsp cumin seeds
4tbsp oil
4tbsp fresh cream
salt

Mix chilli powder,garam masala,ginger gralic paste,salt and curd well.
Marinate paneer with the above mixture for 30 minutes.
Heat oil in a pan, fry the paneer till brown.
Remove from heat and drain on an absorbant tissue.
Grind the onions and tomatoes into a fine paste.
Mix tumeric powder,chilli powder,poppy seeds,dania powder,cumin seeds with water and grind them into a paste.
Heat oil in a kadai,add cloves,cinamon,cardamom and saute for a few seconds.
Add the onion paste and keep stirring for 2 to 3 minutes.
Add the ground masala and mix well.
Add the tomato paste and keep mixing till the gravy is slightly thick.
Add kasoori methi and stir.
Finally add the fried paneer and salt.
Cook for 5 minutes.
Serve hot with rotis.

Aloo Tikki

4 potatoes
3 green chillis
corriander leaves
pinch of asafoetida
1 tsp chilli powder
salt
butter

Boil the potatoes,peel them and mash finely.
Add chillis,corriander leaves,salt,asafoetida and chilli powder to the aloo mash and mix well.
Shape them into fine tikkis.
Heat butter on a pan, fry the tikkis on both sides till golden brown.
Serve hot with pudina chutney or sauce.

Aubergine Raita

2 Aubergines
500 g curds
1 tsp chilli powder
1 tsp cumin powder
pinch of amchur powder
1 tsp mustard seeds
1 red chilli
corriander leaves
4 tbsp oil
salt

Soak Aubergines in water for anhour.
Heat the pan, add oil and fry the aubergines.
Cook till they are golden and flip and let the other side get fried.
Remove from pan and drain them on an absorbant tissue.
Arrange the aubergines in layers in a bowl.
Add the curds on top and sprinkle all the powders on them.
Meanwhile,splutter mustard seeds,chilli and saute for a few seconds.
Now add this tampering on top.
Garnish with corriander leaves.
Chill for an hour before serving.

Oat Soup

1 cup Oats
1 onion
1 chilli
1 clove garlic
1 cup water
1 cup milk
2 tsp butter
cilantro
pepper
salt

Heat butter in a pan, saute the onions,chilli and garlic for 2 minutes.
Add oats and fry for another 2 minutes.
Add salt and water,let it boil.
Add the milk and pepper and keep stirring and let it boil.
Garnish with cilantro and serve hot.

Yummy Mash Potatoes

2 potatoes
2 cups milk
1 tspn butter
salt
pepper

Cut the potatoes into pieces and pressure cook for 3 whistles.
Once its done, remove the potatoes and peel the skin and mash it nicely.
Heat butter in a pan, add the mashed potatoes and milk.
Mix well and cook till the potatoes are creamy.
Add salt and pepper.Mix well.
Serve hot with bread.

Quick Bread Snack

10 bread slices
2tspn mustard seeds
2 onions
few curry leaves
2 tomatoes
5 chillies
1tspn ginger
2tbsp tomato ketchup(optional)
1 lemon juice
2tbsp chopped corrianded
2tbsp oil
salt

Soak bread in water for a few mins.Squeeze water out and crumble them well.
Heat oil in a pan,fry mustard seeds untill they begin to crackle,add onions and curry leaves and fry again till onions turn pink.
Add tomatoes,chillies,ginger and cook for a minute.
Add crumbled bread,ketchup,lemon juice,corriander and salt,cook for a minute.
Serve hot.

Kimchi

1cup cabbage
1tspn chilli flakes
1tspn chilli powder
1tspn castor sugar
1tbsp vinegar
1tspn salt

Combine all in a bowl and mix well.
Refridgerate for atleast an hour before serving.

Corn Methi Pulao

1 cup rice
4 pepper corns
1/2 cinnamon
2 cloves
2 cardamom
1 onion
1 cup methi leaves
1/2 cup boiled corn
1/4 tsp tumeric powder
1tbsp red chilli powder
1tbsp butter
1tbsp oil
salt

Wash rice and keep aside.
Put 2 cups of water to boil.
Heat butter and oil in cooker,add peppercorns,cinammon,cloves,cardamom and onions and fry for a few minutes.
Add methi,corn,tumeric and red chilli powder and keep stirring.
Now ass the boiled rice along with 2 cups of water and salt.
Presure cook for 1 whistle.
Serve hot.

Mexican Rice

1 1/2 cups rice
1 onion
4 garlic cloves
1 1/2 cups tomato puree
1tbsp parsley
50gms mushroom
1tsp cumin powder
1tsp corriander powder
3 dried red chillies
oil
salt

Heat oil in a pan,saute onions for a few seconds and add garlic.
Stir in tomato puree,parsley,mushroom,salt,cumin and corriander powder.
Add the rice and saute over medium heat.Add two cups of water.
Reduce heat,cover the pan and simmer for 20 mins.
Add dry rec chillies and stir in them.
Serve hot.

Home made chocolates

150 gm dark chocolate compound
2 tbsp milk
1/2 cup nuts,finely chopped(almonds)
1tsp vanilla/almond essence
a greased plate/chocolate moulds

Place the compound and milk in a pan.In a bigger pan,bring water to bilk and shut off the heat.
Immediatly,place the pan with compound over hot water and keep stiring slowly as soon as it starts to melt.
When mixture is well blended,take pan off the heat.
Add the essence and the nuts and mix well.
Drop a spoonful of mixture on the plate or moulds and refridgerate.

Chili Paneer

Ingredients
250 gm paneer,cubed
2tsp salt
1/4 cup corn flour
1 tsp ginger garlic paste
water
oil
2 cups spring onion
2tbsp green chilies
1 tbsp soya sauce
2 tbsp vinegar
1/4tsp ajinomotto
greens

Method
Mix together the paneer,1 tsp salt,cornflour and ginger garlic paste with enough water.Marinate for 30 minutes.
Heat oil, fry paneer over high flame till golden colour.
Heat 2tbsp oil in a pan,stir fry the onions over high for a few minutes.
Add chilies and stir,add salt,vinegar,soya sauce and paneer.
Stir well,serve garnished with greens.

Quick Aloo Mutter

Ingredients
2 boiled potatoes
1 cup green peas,boiled
1/4 capsicum
1 small onion
1 tspn chili powder
1/2 tspn turmeric powder
1/2 cup tomato puree
1 tbsp cream
a pinch sugar if required
1 tbsp oil
salt

Method
Heat the oil,add onions,chili powder and turmeric and stir for a few seconds.
Add the puree,potatoes,peas and capsicum and stair again.
Add the sugar and salt,mix well.
Just before serving, add the cream to the gravy and mix well.
Serve hot.

Shahi Tukra

Ingredients
8 bread slices
12 tbsp condensed milk
1 lt milk
1tsp ground cardamom
1/2 tsp nutmeg
30 gm each almond,raisin,walnut and cashew

Method
Trim the edges of the bread and deep fry.
Heat a pan and fry all the nuts and pound them.
Cook the milk,condensed milk,sugar and cardamom on low flame.
When the mixture thickens,put the fried breads side by side.
Let it cool till the bread absorbs all the moisture.
Serve cold garnished with nuts.

Pudina Zatka

2tbsp pudina paste
2tbsp lemon juice
2tbsp jal jeera powder
water

In a glass,add the pudina paste.
Add the lemon juice and jaleera powder to it.
Mix well,then add water.
Shake it and serve chilled.

Easy Cheesy Pasta

2 cups cooked pasta
1 cup boiled veggies(carrots,peas,beans) diced
1/2 cup capsicum,sliced
1/2 cup milk
4 cheese slices
1 tspn butter
salt and pepper

Heat the butter and saute the capsicum for 2 mins.
Add milk and cheese slices and bring to boil.
Add the veggies,salt and pepper.Mix well.
Toss the cooked pasta in the sauce and bring to boil
Serve hot with toast or garlic bread.

Dal Fry

1 cup red masoor dal
1/2 cup sliced onions
1/2 chopped tomatoes
1tbsp chopped green chillies
1 tsp cumin seeds
1tsp aniseed
asadoetida
salt
1/4tsp tumeric powder
1/4tsp chilli powder
chopped corriander/kasoori methi
oil
water

Boil the lenthils in about 2 cups of water till the become soft.
Heat oil,add asafoetida,cumin seeds and aniseeds.
After they sizzle,add onions and fry till light brown.
Add salt,chilli powder,tumeric powder,green chillies,tomatoes and cook for 2-4 minutes till tomatoes dry up.
Add boiled dal along wih water and let it come to boil.
Garnish with corriander or kasoori methi and serve hot with rice or rotis.

Indonasian Potatoes

Potatoes - 5
Oil
Spring Onions -3
Sugar-1/2tsp
Soya Sauce-2tbsp
Salt
Red Chillis-3

Heat oil,Add potatoes and deep fry till golden brown.
Drain on an absorbant paper and keep aside.
Heat 1tbsp oil,Add spring onions and saute.
Add sugar,soya sauce,salt and mix.
Add potatoes and red chillies.
Mix and cook for a min.Serve hot with rice

Besan Chilla

1 cup besan
5 green chillies
1 pinch sugar
salt
3tsp jeera powder
3tsp dania poweder
1 onion
1 tomato
corriander leaves

Mix all,Make a smooth batter using water till it's consistent.
Keep aside for 15 mins.
Heat the tava,Spread the batter and cook.
Once,the side is cooked,turn it over and cook for a few seconds.
Serve immediatly with curds.
