Pyaz Mutter

Ingredients 
1 1/2 cup boiled peas
1 large onion,chopped
3 tomatoes
1 tsp cumin seeds
1/2 tsp finely chopped ginger
1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1/2 tsp amchur,
oil and salt

Method
Boil the tomatoes, peel the skin and puree them in blender.
Heat oil,add cumin and fry till it crackles.
Add onion, saute till they turn light brown.
Add giner, puree and red chilli powder and mix well.
Mix in coriander powder,garam masala and amchur and cook for 5 mins.
Add the boiled peas with salt and mix well.
Let it cook on simmer for 8 mins.
Serve hot with rotis.

Dahi Bread

Ingredients
5 Bread slices cut into cubes
1/2 cup yogurt
1/2 turmeric powder
1/2 tsp chili powder
1/2 tsp cumin seeds
1/4 tsp asafoetida
1/2 tsp ginger
1 onion,chopped
2 tbsp oil

Method
Combine yogurt,turmeric,chili powder and salt with 2 tbsp water.
Add bread cubes and mix well.
Heat oil in a pan, add cumin seeds and let it sizzle.
Add asafoetida,ginger and saute well.
Add onions and fry till the mixture turns brown.
Add the bread cubes and mix well,saute over low heat.
Serve hot with coriander leaves.

Spicy Mushroom

Ingredients
1 packet of mushroom,boiled
1 tsp yogurt
1/4 tsp coriander power
1/4 tsp pepper
salt
1/2 onion
2 green chillies
1/2 garlic
1/2 tsp chili powder
2 tbsp oil

Method
Wash mushrooms,remove the stems and boil for a few minutes, drain the mushroom from the water.
For the marination: In a bowl,add yogurt,salt,coriander powder,chili powder,pepper,salt and mix well.
Grind onion, chillies and garlic to form a semi paste.
Mix mushroom with the mixed spices and marinate for half an hour.
Heat oil, fry the onion-garlic paste till they turn brown.
Add the mushrooms and shallow fry till the mushrooms and well mixed with the paste.
Remove from heat,Serve hot.

Pancakes

Ingredients
100gm flour
200ml milk
1/2 tsp baking powder
1 tbsp sugar
1/2 tsp vanilla essence
2 eggs beaten
2tbsp melted butter
salt

Method
Take a bowl,sift baking powder,flour and salt.
Stir in the eggs,milk sugar and mix well till it forms a slightly thick batter.
Heat pan,grease it with butter.
Take a spoon full of batter,pour on the pan and fry for a couple of minutes.
Flip the pancake,continue frying till both the sides are light golden brown.
Serve hot,glazed with honey and bananas.

Paneer Biryani

Ingredients
cups rice
500gm paneer diced and fried
2 cups onions
2 cups tomatoes
1 tsp chilli powder
1 tbsp ginger
1 tbsp garlic
1 tbsp dania powder
1 tsp jeera powder
1 tsp garam masala
salt
A pinch of saffron mixed in water
7 pepper corns
7 cloves
2 bay leaves
1 cinnamon
fresh coriander

Method
Par boil the rice with 2 cups of water.
Heat oil on a large pan, add cumin and onions,saute well till they turn brown, add green chillis.
On medium,add the cinnamon,bay leaves,pepper corm cloves and cook for 2 minutes.
Add the tomatoes,salt,chilli powder,dania powder,jeera powder and garam masala and cook.
Add the fried paneer cubes and cook for 5 minutes till it forms a thick gravy.
In a non-stick pam, put a layer of paneer gravy without paneer and a layer of rice.
Alternate layers of gravy,rice and paneer with the top layer being rice.
Crush saffron in water and mix in water and pour over the rice.
Cover and cook for 15 minutes on low flame.
Garnish with coriander leaves.
Serve hot with raita.
